Blueberry Collagen Porridge (Oatmeal)

SERVINGS: 1

INGREDIENTS

  • 1 cup water
  • ½ cup gluten-free rolled oats
  • 2 scoops Kate Grosvenor Lifestyle Premium Collagen Peptides
  • 1 tbsp ground flaxseed (linseed)
  • ½ cup blueberries
  • ½ tbsp unsweetened shredded coconut
  • Optional: a sprinkle of cinnamon

DIRECTIONS

  1. In a small saucepan, bring the water to the boil over a medium-high heat. Stir in the oats, reduce the heat to low and simmer for 4–5 minutes, or until the oats are tender and most of the liquid has been absorbed.
  2. Remove from the heat and stir in the Premium Collagen Peptides and ground flaxseed until fully combined.
  3. Transfer to a bowl and top with the blueberries, unsweetened shredded coconut and a sprinkle of cinnamon, if using.

NOTES

Fruit options: The blueberries can be substituted with other low-histamine fruits such as apple, mango or peach.

Serving suggestion: For an extra protein boost and healthy fats, top with a handful of chopped walnuts or pumpkin seeds.
